I’m always rushing against the clock to finish what I have in my fridge, haha. Lunch and snacks are provided at work, so I don’t need to go grocery shopping that often. When I do, it’s such a struggle to finish everything! Shopping for one is hard work. Anyways, I realized last night that I still had half a head of wilty broccoli left in my fridge from two weeks ago (still ok, just wilty) that really needed to be dealt with. I wanted to eat something light, so I figured I’d steam the broccoli and make some light and airy cream of broccoli soup, something that takes practically no time at all to make. Get ready for the easiest recipe ever for delicious bowl of cream of broccoli soup!

- half a head of broccoli (steamed)
- half a cup of whipping cream and some chicken broth for a fluffy frothy soup
- ground black pepper
- parsley (finely chopped or dried flakes)
- cayenne pepper for a little kick
- salt to taste
Combine your steamed broccoli and base ingredients into a blender and puree. If you’re using whipping cream, keep blending until the mixture becomes thick and frothy.
Heat your broccoli mixture/puree in a saucepan at low heat while stirring. Add in the ground pepper, cayenne, and salt. Ladle your soup into a bowl and sprinkle some chopped parsley or dried parsley flakes on top. Add black pepper to taste (a also recommend a pinch of nutmeg).
