Easy Thanksgiving Dinner Featuring All-In-One Turkey/Stuffing/Cranberry Meatloaf “Muffins”

In the spirit of the holidays, I wanted to share a quick and easy recipe for a complete Thanksgiving meal: turkey meatloaf, mashed cauliflower, baked green beans and candied purple yams.  The entire meal took me around three hours to prepare/bake with my mini oven, but if you have a REAL oven, that time could easily be cut in half.  This meal is the perfect solution when you’re cooking dinner for a smaller gathering, without sacrificing that turkey-dinner taste.  Who says you have to slave in the kitchen for eight hours to make a successful feast?

The Meatloaf (a dozen meatloaf muffins)

  • two hand sized chicken breasts (or turkey cuts of a similar size)
  • half an onion
  • three cloves of garlic
  • a quarter cup of chopped scallions
  • two stalks of celery, finely chopped
  • half a cup of frozen veggies (the ones with corn, carrots and peas)
  • half a cup of cranberry raisins
  • one slice of bread
  • a quarter cup of chicken broth
  • an eight cup of sesame seed oil
  • half a teaspoon of paprika
  • half a teaspoon cayenne pepper
  • dried parsley flakes
  • dried italian herb seasoning
  • salt
  • pepper

My “turkey” meatloaf is really more of a chicken meatloaf…couldn’t find turkey in Guangzhou.  Honestly? I couldn’t taste a difference, though.

Run the bread through a food processor to make bread crumbs.

In a large bowl, combine all of your ingredients, except for the chicken, sesame oil, chicken broth and seasoning.

Cube the chicken and run it through a food processor until evenly ground.

Mix in the chicken and the rest of the ingredients. I didn’t have any real chicken broth on hand, so I just disolved a cube of chicken bouillon in a quarter cup of water.

Scoop the meatloaf mix into silicone cups, loosely, and bake them for around 40 to 50 minutes at 190C/375F.  If you pack the mixture too tightly, your meatloaf will be too dense.

The Green Beans (4)

  • green beans
  • half an onion
  • three cloves of garlic
  • chopped scallions
  • sesame seed oil
  • a teaspoon of salt
  • pepper
  • bacon bits of three slices of ham, minced though a food processor

Combine the onion, garlic and scallions in a food processor and pulse until finely chopped.  Mix in the sesame seed oil, salt and pepper.

Wash the green beans and spread them out flat on a baking sheet.  Spread the garlic/onion/scallion mince over the green beans.  Sprinkle on the ham or bacon bits.

Bake the green beans in the oven for around 20 to 30 minutes at 190C/375F.

The Mashed Cauliflower (4)

  • one head of cauliflower
  • one eighth cup of sour cream or plain yogurt
  • one tablespoon of margarine
  • a quarter cup of chicken broth
  • a quarter cup of water
  • salt
  • pepper
  • chopped scallions

Chop up the cauliflower and immerse in a pot with chicken broth and water.  Boil until the cauliflower is soft and easy to mash.  Let most of the liquid evaporate.

Puree the cooked cauliflower in a food processor until you have a creamy paste before transferring the mix back to a pot to continue cooking.

Add in the sour cream or yogurt, salt, pepper and chopped scallions.

Mix everything together and enjoy plain, or with some gravy!

[To make gravy, combine half a cup of canned beef stock, salt, pepper and a tablespoon of flour in a pot.  Boil and stir the mixture until thick.  Swirl it into the mashed cauliflower to serve.]

The Candied Purple Yams (4)

  • two yams
  • twelve marshmallows
  • half a cup of coconut milk

Thinly slice the yams into rounds.

In ramekins, alternate layers of yam and marshmallow pieces.

Pour in the coconut milk.

Bake the yams in the oven for around 30 to 45 minutes at 190C/375F.
